I don’t care what kind of gourmet chef you fancy yourself as – sometimes you just want to enjoy some all American comfort food. This is one of my family’s favorite recipes and an all-time classic if you ask me. Not only is it kid-friendly, it won’t break the calorie bank with less than 300 calories per slice.
I served this with roasted potatoes and onions.

Bacon Cheeseburger Meatloaf Ingredients
1 lb. lean ground beef
6 slices bacon
4 oz. (about 1 cup) shredded cheddar cheese
1 egg, lightly beaten
¼ cup plain bread crumbs
½ cup finely chopped dill pickle, divided
¼ cup minced onion
2 tbsp. mayonnaise
2 tbsp. milk (any kind, I used unsweetened almond)
1 tbsp. Worcestershire sauce
4 tbsp. ketchup
1 tbsp. mustard
Cook bacon however you prefer and chop it very finely. I like to bake mine at 375 degrees for 15 minutes. It should be slightly crispy.
Preheat oven to 350 degrees.
In a medium bowl combine bacon, ground beef, cheddar cheese, egg, bread crumbs, HALF of the dill pickle, onion, mayonnaise, milk and Worcestershire sauce. Press the meat mixture into a loaf pan sprayed with cooking spray.
In a small bowl, combine the ketchup and mustard. Spread this over the top of the meatloaf. Sprinkle the rest of the dill pickle on top.
Bake for 50 minutes, or until meatloaf is cooked through. Drain grease before serving if desired (be careful to not let toppings slide off).
