Brie and Apple Grilled Cheese and Broccoli Cheese Soup

I’m all about a good grilled cheese with soup in the winter time. I like trying unconventional combinations, and these two rocked! Brie and apple are a match made in heaven, and the broccoli soup was creamy, delicious and can be frozen for a quick lunch or dinner in the future.

The Recipe

Turkey, Brie and Apple Grilled Cheese

Adapted from 100 Days of Real Food

Makes 2 sandwiches

Ingredients

Directions

  1. Combine apple, honey, vinegar, ginger and 2 tbsp. water in a small saucepan and bring to a boil. Cover and simmer on low for 5-8 minutes, or until apples are very tender.
  2. Drain the apples and mash them into a chunky consistency.
  3. Split apple mixture evenly between two slices of the bread and top each with 1 oz. of brie and 2 oz. of turkey.
  4. Grill in oil over medium low heat, until filling is warm.

 

Broccoli Cheese Soup

Ingredients

 

Directions

  1. Melt coconut oil over medium heat, add diced onion and cook about 5 minutes.
  2. Whisk in flour and cook for another 2 minutes.
  3. Add broccoli, broth, milk and pepper and stir briefly. Bring pot to a boil then cover and simmer on medium low for about 10 minutes.
  4. Transfer in batches to a blender (or simply use an immersion blender) and blend until smooth. Keep pot warm.
  5. Return soup to warm pot and stir in sour cream and cheese until cheese is melted.
