Buffalo Turkey Meatloaf with Sauteed Peas and Mushrooms

I am cuckoo crazy for anything buffalo flavored, and I will put buffalo sauce on just about anything. This meatloaf absolutely amazed me, and it is probably my #2 favorite meatloaf of all time (with bacon cheeseburger being #1).

I neglected to take a picture of the side with this meal – but we had sautéed peas and mushrooms. Nothing really interesting!  Just sauté a bag of frozen peas and a package of mushrooms, season with pepper to your heart’s desire and you’ve got yourself a tasty side of veggies.

The Recipe

Adapted from Mother Thyme

Buffalo Turkey Meatloaf

  1. Preheat oven to 350 degrees.
  2. In a large bowl combine the turkey, bread crumbs, celery, onion, garlic  and half of the gorgonzola cheese.
  3. In a small bowl, whisk the egg and half of the buffalo sauce.
  4. Pour egg mixture into meat mixture and press into a loaf pan sprayed with non-stick spray.
  5. Spread the remaining buffalo sauce over the top, then sprinkle with remaining cheese. Bake for 1 hour or until internal temperature reaches 165 degrees (if you use 2lbs. of meat it could be 15-20 minutes longer).
