Smoked Sausage Soup with Black Eyed Peas and Quinoa
This soup was the result of experimentation and I could hardly believe how well it turned out. It is – SO. GOOD. It has a kick of Cajun flavor, but is not super spicy (thus very kid friendly). I served this with my homemade healthy wheat cornbread.
The soup can be made in a crock pot or dutch oven. I slow cooked in the crock pot and the flavor was unbelievable! Definitely a keeper.
Smoked Sausage Soup with Black Eyed Peas and Quinoa Ingredients
1lb. smoked sausage, sliced
2 (15.5oz.) cans black black eyed peas, drained and rinsed
1 (14.5oz.) can fire roasted tomatoes
2 cups cooked quinoa (I used pre-cooked frozen quinoa, thawed)
½ of a medium onion
4 cups chicken broth
2 tsp. paprika
½ tsp. garlic powder
½ tsp. black pepper
¼ tsp. thyme
Combine all ingredients in a crock pot OR dutch oven. For a crock pot, cook on low for 3-4 hours. In a dutch oven, simmer on medium-low for 1 hour.
