Smoked Sausage Soup with Black Eyed Peas and Quinoa

 

This soup was the result of experimentation and I could hardly believe how well it turned out. It is – SO. GOOD. It has a kick of Cajun flavor, but is not super spicy (thus very kid friendly). I served this with my homemade healthy wheat cornbread.

 

The soup can be made in a crock pot or dutch oven. I slow cooked in the crock pot and the flavor was unbelievable! Definitely a keeper.

Smoked Sausage Soup with Black Eyed Peas and Quinoa
Ingredients

Directions

  1. Combine all ingredients in a crock pot OR dutch oven. For a crock pot, cook on low for 3-4 hours. In a dutch oven, simmer on medium-low for 1 hour.
