This thick and creamy dressing goes great with greens, but I have used it for a lot of other purposes as well - as a Caesar chicken pizza base, the sauce in Caesar chicken lasagna, to coat baked chicken, to dollop on grilled fish, etc. If you prefer your dressing slightly more fluid, feel free to add a couple splashes of milk or water to thin it out.
Light Greek Yogurt Caesar Dressing
2 tbsp. lemon juice
½ tsp. Dijon mustard
½ tsp. Worcestershire sauce
1 tsp. minced garlic
1 tbsp. oregano
¼ cup grated parmesan cheese
¼ cup mayonnaise
¾ cup plain Greek yogurt
Whisk together the lemon juice, mustard, Worcestershire sauce, garlic, oregano, parmesan cheese and mayonnaise.
When thoroughly blended, stir in the yogurt. Cover and chill for a couple of hours before using or serving to allow flavors to blend.
