Mexican Black Bean and Avocado Salad

 

This Mexican inspired salad makes a great side to any Mexican dish. To make a main course, consider adding another can of beans or chopped  chicken.

The Recipe

Mexican Bean and Avocado Salad

Ingredients

Directions

  1. In a large bowl combine all ingredients through romaine.
  2. In a small prep dish or bowl combine olive oil, cilantro, lime juice and chili powder and cumin, stirring well. Pour over salad ingredients and toss.
