Polenta and Peaches Bake


Polenta is such a quick and easy side – I’m surprised that more people don’t enjoy it! I recently dressed up rolled polenta by adding some peaches and brushing them with honey and cinnamon, creating a sweet side dish that my family went crazy over. I found that it is good both hot and cold, and ripe peaches are a must!

The Recipe

Polenta and Peaches Bake


  1. Preheat oven to 350 degrees.
  2. Put the roll of polenta into a microwave save bowl and heat for 1-2 minutes, until soft. Add the milk and mash the polenta until it resembles mashed potatoes. Spread it into a 9” x 13” baking dish in a thin, even layer.
  3. Place the peaches on top of the polenta.
  4. In a small bowl, combine the butter, honey and cinnamon. Evenly brush the mixture over the peaches.
  5. Bake for 25 minutes, until peaches are soft and polenta is heated through.
