Bread pudding is one of my favorite desserts of all time – but there’s no reason why it should be strictly relegated to the sweet category. Savory bread puddings are hearty and filling, and this one features the flavors of ham, apple and applewood smoked gouda cheese – although sharp cheddar would be amazing also! I served this with roasted brown sugar butternut squash.

Savory Ham and Apple Bread Pudding Ingredients
8 slices whole wheat bread cut into 1 inch cubes (I used Ezekiel sprouted grain bread)
1 ½ cups milk (whole, skim or almond)
¼ tsp. allspice
½ tsp. cinnamon
1/8 tsp. thyme
1/8 tsp. nutmeg
8 oz. chopped, cubed ham
1 tart apple, like granny smith
4 oz. (approximately 1 cup) applewood smoked gouda cheese OR sharp cheddar cheese
1 tbsp. butter, melted
In a medium bowl, whisk the eggs, milk and spices. Add bread cubes and stir well, soaking all the bread. Let stand for 10 minutes.
Preheat oven to 350 degrees.
Add the apple, ham and half of the cheese to the soaked bread. Stir to combine then pour the mixture into a 9 x 9 baking dish. Drizzle the melted butter on top and cover with the remaining cheese. Let stand for 10 more minutes to allow the bread to continue soaking up the liquid.
Bake for 40 minutes, until set and lightly browned.
