Indulge in this sweet side dish of sweet potatoes and apples coated with a honey and cinnamon glaze and baked to tender perfection!
I have been making this at least once a week for awhile now and I have yet to grow tired of it! It is a great side dish for burgers and hot dogs, and serves well cold or hot as far as I’m concerned – but try it hot first.
Sweet Potato and Apple Bake
2 large sweet potatoes, peeled and chopped into cubes (peeling is optional)
2 large apples (I used gala), peeled and chopped into cubes (peeling is optional)
1 tbsp. extra virgin olive oil
1 tbsp. butter
2 tbsp. honey
1 tsp. garlic powder
2 tsp. cinnamon
Preheat oven to 400 degrees.
Place the chopped potatoes and apples into a 9 x 13 baking dish.
Mix the rest of the ingredients in a bowl and pour the glaze over the top of the potatoes and apples. Use a spoon to stir everything around, coating the potatoes and apples with the glaze.
Bake for 20 minutes, then remove and stir. Return dish to oven and bake for another 20 minutes, until potatoes and apples are tender.
